There are some actors that can play anything and do it in such a way that they become the character, and others that adapt the character to themselves, for instance, Nicolas Cage, who I find to be a great actor, but when I'm watching one of his movies, Im watching him, not the character.
Jack Nicholoson is one of the greatest actors ever to set foot in Hollywood, and can play anything that he will rock it. For instance, he plays a great drunk in Easy Rider and a great psychopath in The Shining, and manages to be utterly charming in Something's Gotta give. This is because he makes the characters a part of himself and that's why he is so believable.
Sir Morgan Freeman goes just with Jack, from Driving Miss Daisy to The War of the Worlds, in which the only good part is his narrative. But he does fall with some technicalities when he is bought just for his name like in Bruce All Mighty or Batman (Good movies Which personally I just can't stand).
Anthony Hopkins is another actor who achieves to basically, win my heart and mid. He can be starring in a classic (Silence of the lambs / The Elephant Man) or being a suport actor for some really bad movie (The Mask of Zorro) but he always find a way to be the best. By the way, I saw one of his new movies like two or three years ago, Fracture, and it was more than descent, recommendable.
Sir Michael Caine falls into the same criteria as Morgan Freeman, as he is a great actor but Hollywood tends to use him for movies like well, Batman, again. But still, a MAGNIFICENT actor.
Michael Douglas is another example of a great actor. I think I like him so much because his characters represent what I wanna be. Still, he hasn't made anything really good, well I mean, his acting is great, but really, in which great movie has he starred? Any thoughts? Wall Street maybe, but still.... I think he should stop doing magnificent appearances in crappie movies such as Ghosts of Girlfriends Past, Beyond a Reasonable Doubt, or The In-Laws. And do something really good ones in for all. (I was wrong, he made a good movie recently King of California, it isn't a masterpiece but it is nice, decent and fun)

Emma Thompson and Meryl Streep are both great actresses but their work tends to fall in my boring lists but still, great actresses.
Now for the Bias Part,
Tarantino, I really think that he is a great actor, in movies like From Dawn Till Dusk or Pulp Fiction (Bonnie), he is a really good actor, but maybe it is because i worship him so much (Except for Inglorious Bestards as you might have read recently).
Then I agree with DF (My films teacher) with Denzel Washington, (From Carbon Copy to American Gangster) and I just realised that we both have Emma Thompson. Al Pacino and Robert Deniro are both great actors that I would also watch anything with, but I think that is kind of obvious so I wont get into details. O and yes, Gary Oldman.
Ray Liota and Joe Pesci are two magnificent gangsta kind of actors that I was leaving behind.
